		<description>This is good advice. I worked as a waiter at a nice steak house long ago. The manager told me how the cooks did the poke test, though I never internalized it for my amateurish back-yarding. He said their poke test feeling example was to poke at your own fleshy palm under the thumb with the thumb relaxed.  This feels like rare.  Then flex your hand open, and it feels like mid-rare.  Then, flexed feel the center of your palm for medium.  For higher temps, just burn the steak and don&#039;t worry about it.  Hehehe.</description>
