Chipotle BBQ Shrimp Skewers

I’ve tried lots of BBQ Shrimp recipes, but this is my newest favorite. Simple, but delicious with a little kick (or a lot, depending on how many chipotle peppers you use.) For grilling I find that Tiger shrimp, because of their large size and stronger flavor work best. Sorry I don’t have a picture, of these. I was too busy eating!
Ingredients
- 1 lb. of shrimp (bigger the better)
- 3 tbsp butter, melted
- 1/4 cup of your favorite BBQ sauce
- 2 chipotle peppers (from a can, with adobe sauce), chopped
- 2 cloves minced garlic
- 1 tbsp lime juice
Directions
Mix all the ingredients together to create your marinade. Peel and devein the shrimp. Place shrimp into the marinade, cover and refrigerate for 30 minutes. Thread the shrimp onto skewers and grill until opaque, about 4 minutes a side. This dish goes well with simple grilled pineapple, which you can grill on skewers along side the shrimp.

Wow! Not that sounds delicious. First of all the Chipotle pepper, though not the hottest pepper, is my absolute favorite, due i suppose to it’s smoky flavor. I love bbq shrimp, anyway, so, this is one i will copy down and use this weekend! Now, i have a suggestion. What about using a dried flaked chipotle, or better yet, a powdered chipotle to make the marinade? Reason i ask, is i sell both, and have some on hand. I like the powder as a finisher in fajita seasoning, or on huevos rancheros. I wonder if it would do well in the marinade you mentioned. Hmmm. Ah think Ahm gonna try it. Thanks for the idea!
