Turducken time!
If you are going to get a Turducken for the holidays or that next family get together, you should check out Cajun Grocer.com. You DO know what a Turducken it is right? It’s a chicken stuffed inside a duck, stuffed inside a turkey. CajunGrocer.com ups the ante by stuffing sausage in as well!
You order them frozen, then make sure you give yourself 48 hours of thaw time (in the fridge) before popping them in the oven. These are ready to cook. I’ve got one coming, I will let everyone know how it is.

Grilled Chicken with Blueberry BBQ Sauce Recipe
Making your own BBQ sauce, especially one with a unique flavor such as this one, immediately establishes you as a serious grilling aficionado.
Ingredients
- 6 bone in chicken breasts
- 2 cp. fresh blueberries
- 1/4 cp. balsamic vinegar
- 3 tbsp honey
- 3 tbsp ketchup
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
Bring all the ingredients (except the chicken of course) to a low boil in a saucepan. Reduce the heat, and simmer for 10 to 12 minutes until the sauce thickens. Remove from heat and allow the sauce to cool. Pour the BBQ sauce into a blender and blend until smooth.
Put the chicken breasts and a 1/3 cup of BBQ sauce into a zip top bag and coat well. Marinate in the refrigerator for 30 minutes to an hour. Reserve the rest of the sauce for serving. Grill the chicken over medium high until cooked, 7-8 minutes per side. Top the chicken with the BBQ sauce and serve.

Smoked and Fried Chicken Thighs
Over at the BBQ General weblog the General has posted an article with a number of spicy grilled recipes. One of the more interesting to me was his recipe for barbecue chicken that is first smoke, then deep fried.
Before going into the smoker, the chicken marinates in soy sauce, orange juice, and barbecue sauce. Sounds delicioius, I’ll definitely be adding this to my next cookout menu.

Smoked Chicken with the Smokenator
A few weeks ago I wrote about the The Smokenator contraption that converts your Weber grill into a water smoker. The other day I tried out a smoked chicken recipe to see how it did.
To get started, cut some pats of butter (about 1/2 a stick) and some fresh herbs such as rosemary and basil. Using a knife, loosen the skin under the breast, thighs, and legs. Push the butter and herbs between the skin and the meat, distributing them throughout the chicken.
To prepare I lit my coals, added some wood chunks, and filled the pan with water. To cook the chicken I sat it atop a broiler pan in the bottom of the grill, rising it up a few inches. About 1 1/2 hours later (a little faster than my Brinkman water smoker, as the smokenator runs hot) the chicken was ready. Tasty!

Recipe: Chicken Sates with Peanut Sauce
You’ll find Chicken sate to be a featured appetizer in many Thai restaurant, but in my opinion they make a good meal on their own when served over rice. Once again I ate them all before taking a picture. Mine look a little different those pictured here. I like mine with a little char on them, and I don’t sprinkle them with sesame seeds.
This recipe includes several parts actually; a marinade and a peanut dipping sauce. If you wish, you can usually find Thai style peanut sauce for sale in many markets, saving you the hassle.

Recipe: Huli Huli Chicken
Huli Huli is Hawaiian for barbecued chicken, and it sounds delicious. Pineapple, rice wine vinegar, and ginger give this dish an Asian flavor. This recipe is especially well suited to rotisserie cooking.
By the way, one of the ingredients may not ring a bell to you. “Shoyu” is a type of Japanese soy sauce. Understanding that your neighborhood 7-11 just doesn’t stock this kinda of thing, feel free to substitute whatever type of soy sauce you can get a hold of.

Pulled BBQ chicken sandwhiches
When most people think of barbecue sandwiches, two things come to mind. Chopped beef and pulled pork, depending on your particular neck of the woods.

Double decker trash can turkey
Previously, I’d written about building a smoker from a trash can for about $50. Here’s a follow on article explaining how to modify the setup to smoke a turkey and a couple of briskets.
In this modification, they’ve used a second trash can to double the height of the smoker in order to make the extra room necessary for such a feast. Water heater insulation was used to seal the area between the trash cans and help them retain their heat better.

Grilled chicken thighs
So under appreciated. Skinless, boneless chicken thighs are not only cheap, they taste good and couldn’t be easier to grill. Chicken thighs are of course dark meat, and thus more tender, moist and flavorful.
To grill them, I first give them a healthy dose of salt and pepper, or sometimes a simple chicken rub or seasoned salt. Then in the fridge for half an hour or so. On a medium hot grill cook about 10 minutes per side until done. Keep the lid up, these are pretty thin so you won’t need it. When done the thighs will support their own weight when you grab them with your tongs. If you like, baste with your favorite barbecue sauce for the last few minutes of cooking.
