The folks at World Harbors have released a new line of BBQ and steak sauces inspired by, of all people, pirates of old. The new World Harbors Buccaneer Blends line features five unique BBQ sauces and two distinctive Steak sauces. I had an opportunity to sample some of the flavors this weekend after World Harbors was kind enough to send a long a sampler pack. Definitely a different combinations of flavors then the same old sauces. My favorites are the Honey Mango BBQ Sauce and the Apple Maple BBQ Sauce. I guess its the fruit overtones, something you don’t find commonly in BBQ Sauce, that make them stand out. Add these to some grilled chicken breasts or thighs for a tasty, easy treat.

Budweiser Barbecue Sauce
Budweiser has launched its own line of barbecue sauces, just on the heals of new flavors from Bulls Eye. The Budweiser-branded sauces will be available in major grocery and club stores in addition to restaurants nationwide. In addition, the sauces will be sold at all Anheuser-Busch tour center gift shop locations. Here’s the flavors they’ve announced.
- Budweiser Basting Sauce A perfect fit for fish, chicken, pork and beef. This sauce has a distinct mustard flavor that’s enhanced with a blend of fresh garden vegetables, herbs and a nice hint of caramelized sweetness. A touch of soy and citrus rounds out this great baste.
- Budweiser Wing Sauce Built for, what else, a Budweiser and wings! The wing sauce is nicely balanced with the right amount of heat, a hint of sweetness, a nice intermingling of butter and garlic with a pallet-cleansing burst of vinegar. This sauce is comfortably mild and can be kicked up for those who love hot and spicy.
- Budweiser Barbecue Sauce This sauce holds a blend of heat, vinegar, fresh herbs and garden vegetables with subtle notes of hops, malts and rice from the Budweiser.
- Beechwood Smoked Budweiser Barbecue Sauce Offers traditional barbecue flavor with subtle smokiness and a slightly tart and sweet balance that has a caramelized sugar finish. Bull’s-Eye Barbecue Sauce Introduces New Flavors
Venerable favorite mega-mart barbecue sauce favorite Bulls-Eye now comes in four new flavors. Earlier this month Kraft announced an upgrade to their line of popular barbecue sauces. The new flavors of barbecue provide some new options for the backyard griller looking for something new.
The new flavors added to the line are:
- Steakhouse BBQ with A.1. – Bulls-Eye barbecue sauce, flavored with the ever popular A.1. steak sauce.
- Smokin’ Chipotle Spiked with the smokey kick of chipotle peppers
- Raging Buffalo A combination of classic barbecue and hot wing sauce
- Sweet & Sticky BBQ Rib Sauce An extra thick sauce with a shot of apple cider

Wicked Cocktail Meatballs Recipe
The folks over at Wicked Tomato have posted an interesting recipe for cocktail meatballs, featuring their particulary flavor of BBQ Sauce. Sounds interesting, that’s for sure. Sam’s and Costco both sell bags of frozen mini-meatballs, which would make this a quick and easy appetizer.
Ingredients
- 1 jar Wicked Tomato BBQ Sauce
- 1 Tbs. horseradish
- 1 10-oz. jar grape jelly
Directions
Combine all ingredients in saucepan and cook until blended. Add cooked mini meatballs and heat to warm.

Tangy Espresso BBQ Sauce Recipe
This easy to prepare barbecue sauce has the tang of vinegar and spicy mustard, the sweetness of brown sugar, and the complex earthy taste of espresso. Delicious on chicken or beef. Try it on a hamburger! Your favorite chili sauce gives it some kick!
Ingredients
- 12 ounces of chili sauce
- 1/4 cup light brown sugar
- 2 tablespoons instant espresso powder
- 2 tablespoons spicy brown mustard
Directions
Whisk together chili sauce, vinegar, sugar, espresso powder, and mustard. Bring to a low boil, and reduce the heat to medium-low. Simmer for 2 minutes. Baste the meat well the last 8 to 10 minutes of grilling. This also makes a great dipping sauce, so you might want to make extra.

Recipe: Hershey chocolate barbecue sauce
Here’s an interesting concoction. A chocolate syrup inspired barbecue sauce to try on grilled pork or chicken. The Special Dark variety is used because it’s not as sweet as it more popular cousin milk chocolate. Starting with the familiar ketchup base, vinegar adds some twang and hot sauce provides the kick.
You might want to substitute fo one of the other bittersweet chocolate syrups on the market from any of a number of gourmet chocolate houses. While more expensive, they’ll add a more complex and richer flavor.

Recipe: Dr. Pepper Mop Sauce
Here’s a sweet mop sauce good for basting ribs or brisket.
The Dr. Pepper adds a touch of sweetness and that mystic something that only Dr. Pepper has that you just can’t put your finger on. The oil adds some stick-um power. Don’t worry, the taste isn’t so obvious that anyone will guess your secret.
Ingredients
- 3 cups of Dr. Pepper
- 2 tablespoons vegetable oil
Mix well with a whisk, heat and baste while warm.

The hot sauce festival was hot
As if there was any doubt, the hot sauce festival was pretty dang hot. As I mentioned in a previous post, this weekend was the 15th annual Hot Sauce Festival in downtown Austin. Very crowded and hot, but definitely Austin. Good music, reasonable beer prices, free hot sauce, quite the bargain.
I tried a lot of different salsas, grilling sauces, spice rubs, and other spicy foods. For grilling, I recommend the Austin Spice Company’s “Smoky Hill Barbeque Salsa and Grilling Glaze”, which you can order from their website. It can be used either as dip, or like you would a barbecue sauce. Tasty!
I also bought some roast garlic sea salt from Spiceburst Gourmet Spices. This stuff will go great on grilled ribeyes.

Austin Chronicle Hot Sauce Festival is tommorow
The 15th annual Austin Chronicle Host Sauce Festival is tomorrow, Sunday August 28th at Waterloo Park in downtown Austin from 11:00 to 5:00. Best of all, entry is free. Plenty of hot sauce, hot music, and well hot people since its topping 100 degrees here right now.
Entry to the competition is available at the show, just complete an entry form from their website and show up with a quart of hot sauce. Last year their were over 300 entries and over one hundred gallons of hot sauce consumed. Other than hot sauce, there is always plenty of food vendors selling a little of everything, including snow cones and cool drinks (which you’ll no doubt need).

Removing barbecue stains
Some more useful advice for labor day weekend festivities. How to remove barbecue sauce stains. Who doesn’t enjoy a good messy barbecue, except for the person doing the laundery. Here’s a tip on removing your favorite sauce from your favorite shirt.
First, rinse the stain with cool water. Apply a liquid enzyme detergent and let the clothing rest for about an hour before rinseing. Next, sponge with hydrogen peroxide. Finally, apply a laundry presoak and then wash with an enzyme detergent. Drying the clothing in the sun will further help bleach out the stain.

Rooster adds kick to white barbecue sauce
In Northern Alabama, locals enjoy a regional specialty you won’t find most anywhere else — white barbecue sauce. Along with a history lesson on where this sauce came from, I’ve included my favorite version of the recipe. There are many variations to be sure, but in this one I’ve used a spicy Asian ‘Rooster’ sauce to add some extra kick.

Steak sauce showdown
What’s your favorit steak sauce? In a recent article in the Detroit news, six varieties of steak sauce were put to the test. A good steak sauce should compliment the meat, without overpowering it. That was the challenge.
Now I know that many a steak snob will scoff at the notion of putting anything on a perfectly grilled steak, but sometimes it can use a little extra something, especially on cheaper cuts of meat. Besides, steak sauce is also good on hamburgers.
The winner was a brand that we don’t see down here in Texas, “HP”. I can only assume it’s not the same dudes who make the printers, but then again maybe their’s steak sauce in those printer cartridges instead of ink. The complete list of winners, in order, were:

TABASCO Sauce
TABASCO sauce, the grandaddy of all hot sauces, has been king of the hill since its introduction in 1868. The ubiquitous pepper sauce, TABASCO is a great way to add a shot of heat to just about any type of food, from chicken wings to eggs to home made barbecue sauce. So just what makes this hot sauce so popular? I decided to take a deeper look at this fiery staple and discovered some interesting facts.

Black Panthers Market Barbecue Sauce
Notorious 1960’s black militant group The Black Panthers is soon to be marketing their own brand of barbecue sauce. The new sauce, dubbed Burn Baby Burn is derived from the chanting of rioters during their hayday.
David Hilliard, an original member of the Black Panthers, is behind the new sauce, and makes no apologies. Hilliard rejects any suggestion that celebrating an era of rioting that killed dozens of people and caused millions of dollars in property damage is in any way bad taste.
And he rejects the notion that the former militants have sold out, despite the fact that they have applied for a trademark on “Burn Baby Burn” and are also planning a new line of clothing.
